     Ginger-Peach Pork Tenderloin

Ingredients
1 tsp olive oil
1 (1-lb) pork tenderloin
1 garlic clove, minced
1 tsp grated fresh ginger
2 tbsp peach preserves
1 tsp lower-sodium teriyaki sauce
1/3 tsp crushed red pepper
 

Instructions
Heat oven to 400 degrees F. Heat oil in large nonstick skillet over med-high heat until hot. Cook pork 5 minutes or until browned on all sides. Place on foil-lined small rimmed baking sheet. Rub garlic and ginger over pork. Bake 15 minutes.
Meanwhile, combine all remaining ingredients in small bowl. Spoon half over pork; bake 5 minutes. Spoon remaining mixture over pork; bake 5 minutes or until internal temperature reaches 145-150 degrees F. Cover loosely with foil; let stand 5 minutes before slicing.
