     Chicken Quesadillas

  dry, herbal white wine or Bohemia beer from Mexico

Ingredients
4 (7-10 inch) whole wheat tortillas
2 tsp olive oil
3/4 cup finely shredded reduced-fat Monterey Jack cheese, divided
12 oz cooked shredded chicken breast (3 cups)
1/2 green bell pepper, cut into thin strips
1/4 cup refrigerated salsa
1/4 cup chopped cilantro
2 green onions, chopped
 

Instructions
Heat oven to 350 degrees F. Lightly brush 1 side of tortillas with oil. Sprinkle lower half of each with 2 tbsp of the cheese; top each with chicken, bell pepper, salsa, cilantro, green onions, and remaining 1tbsp cheese. Fold top half over bottom, pressing lightly to make half circles. Place on baking sheet.
Bake additional 8 minutes or until golden brown on bottom. Turn; bake an additional 3 minutes or until crisp.
To shred the chicken, remove any bones and use a fork to pull the meat into shreds. Substitute chopped fresh tomatoes and minced jalapeno chiles for the bottled salsa if desired.
