     Microwave Sweet n Sour Meatloaf

Ingredients
1 egg
5 T ketchup (divided)
2 T prepared mustard
1/2 cup dry bread crumbs
2 tb onion soup mix (about 1/2 a package)
1/4 tsp salt
1/4 tsp pepper
1 lb ground beef
1/4 cup sugar
 
2 T brown sugar
2T apple cider vinegar

Instructions
In a bowl, lightly beat the egg. Add 2 tablespoons of ketchup, mustard, bread crumbs, dry soup mix, salt and pepper. [I usually leave out the salt.] Crumble beef over mixture and mix well. Shape into an oval loaf. Place in a shallow 1-quart microwave-safe dish; cover with waxed paper. [Or a lid!] Microwave on high for 11-12 minutes or until meat is no longer pink, rotating a half-turn once; drain. [You don't have to rotate it if you have one of those spinning thingies in your microwave.]
In a small bowl, combine the sugars, vinegar and remaining ketchup; drizzle over meat loaf. Cover and microwave on high for 3-5 minutes. [Go for the lesser time -- it can kind of tend to dry out if you go too long.] Let stand for 10 minutes before slicing.
