If using the grill, preheat it on a low heat. Leaving the skins on the
bananas, halve each length wise and then width wise. Sprinkle the
bananas with lemon juice.
|
|
|
Mix the brown sugar and the cinnamon together in a small bowl
and spoon this into the centre of each split banana. Wrap the
bananas in aluminum foil and either place them onto the barbecue
coals or place them under the grill. Cook for 3 minutes. If cooking
under the grill, cook for 3 minutes on each side.

|
|
Serve in a bowl together with vanilla ice cream topped with a
sprinkling of the remaining brown sugar and cinnamon mixture.

Adults often enjoy this dish served up with their favourite tipple.
Tip the bananas out of their skins into bowls together with the
sweet liquor caught in the aluminium foil. Add a splash of
golden rum, sprinkle with muscavado sugar and maybe a splash
of cream. If a good rum is not available then brandy makes a
more than acceptable substitute.
