     Mixed Vegetable Casserole

1-16 ounce can of tomatoes
2 cups sliced celery
1-1/2 cups thinly sliced onion rings
1-1/2 cups sliced carrots
1-9 ounce package frozen green beans
3 to 4 cups green pepper sticks (optional)
1/4 cup butter
3 tablespoons tapioca
1 tablespoons sugar
2-1/2 teaspoons salt
1/2 teaspoon pepper

Mix ingredients in a large casserole dish. Cover and bake 1 hour at 350 degrees. Stir gently with fork. Bake 30 minutes more; remove cover the last 10 minutes.
