6-8 skinless, boneless, chicken breasts, cut into bite sized pieces
2 cups milk
2 cups uncooked white rice
1 can condensed cream of mushroom soup
1 can condensed cream of chicken soup
1 tsp. salt
1 tsp. lemon pepper
1 tsp. garlic
1/2 cup of shredded cheddar cheese
Instructions
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl combine the milk, rice, soup and spices. Mix well. Pour mixture into a lightly greased 9x13 inch baking dish. Add the chicken pieces.
Cover dish tightly with aluminum foil and bake in the preheated oven for approximately 90 minutes or until rice is done, stirring every 30 minutes - the stirring is VERY important, if you don't stir, the top rice doesn't get all the way cooked and gets hard and dry.
Uncover the dish, add the cheese, and bake for another 15 minutes to allow the rice to brown.
