Whisk together egg yolks, sugar and 1/4 c. of the lime juice atop a
double boiler until thick (3-5 minutes).
Strain mixture and place in a mixer fitted with a whisk attachment.
Beat on medium speed for a few minutes. Add condensed milk,
remaining juice and zest. Add food coloring if desired and mix
well.
Pour into pie shell and freeze at least 5 hours.
