     Asian Salmon with brown rice pilaf

Ingredients
Salmon- 2 skinless salmon fillets (about 4 ounces each)
1 T. Olive oil
1 clove garlic, pressed or minced
1 T. grated fresh ginger root
1 tsp. soy sauce
1 tsp. maple syrup
2 green onions, chopped
Brown rice- 1 c. short grain brown rice
1 T. olive oil
 
1/2 onion, chopped
1/2 red bell pepper, chopped
2 c. water
1/4 c. finely chopped parsley
Salt and freshly ground black pepper (optional)

Instructions
For rice, heat oil in a medium saucepan. Add onion and bell pepper, cook 3 minutes. Add water and rice; bring to a boil.
Reduce heat; cover and simmer 50 minutes or until rice is tender and liquid is absorbed. Fluff with fork; stir in parsley and season with salt and pepper, if desired.
For the salmon, place fillets in a shallow dish. In a small bowl, mix the olive oil, garlic, ginger root, soy sauce, maple syrup and green onions. Pour the mixture over the salmon fillets and let marinate for 30 minutes.
Place fish on grill (or bake in oven at 350 for 20 minutes) cook until fish flakes off easily. Place cooked fish on a bed of rice and serve.
Serving Suggestions
4--Can substitute diced potatoes for rice.
