     Italian Farro Salad

  Chateau La Canorgue 2008 Luberon Rose

Ingredients
4 cups water
1 ½ cups Organic Italian Farro (At the Wine Country)
1 tsp salt
1 ¼ cups yellow and red pear tomatoes sliced in half
½ red onion chopped
1/4 cup finely chopped Italian Parsely
1 cup cucumber chopped (I like Persian, but hot house work well also)
1 – 2 large garlic cloves minced
¼ cup Napa Valley Dipping Oil, Or to taste (At the Wine Country)
 

Instructions
Bring water to a boil and add salt and farro. Cook farro until “al dente” about 10-12 minutes. Drain and set aside to cool.
In a large mixing bowl, combine tomatoes, red onion, cucumber, garlic cloves, dipping oil, and cooled farro. Mix until all pieces are thouroughly coated. Add parsely and toss. Place salad in refrigerator and let flavors meld for 4 hours or overnight. This is a perfect salad for a party outdoor. Since it doesn’t contain mayonnaise, there is no need to worry about spoilage!
Serve with Chateau La Canorgue 2008 Cotes du Luberon Rosé or Bergerie de L’Hortus 2008 Coteaux du Languedoc Rosé de Saignée
