     Late Night Home Fries

Ingredients
2-3 Russet potatoes
Mayo
Garlic (crushed)
Hot Sauce
Butter
Olive oil
Small onion
 

Instructions
Scrub the potatoes, and dice into 1/2 inch cubes. Chop the onion Melt Butter and olive oil in your biggest (preferably cast iron) skillet until it bubbles.
Add the potatoes and onions to make one even layer. Don't crowd the pan, or you won't have crispy home fries, you will have mush. Work in batches, or get 2 pans going if you must.
This is where it get's tricky - I'm trying to recreate an amazing appetizer I had in Washington Square, NYC - and this sauce just isn't quite right... Mix some mayo and crushed garlic to form an aoli.
Once the home fries are crispy (about 10min each side) and cooked all the way through (if they're still a bit raw, drop the heat and cover.) Spoon onto a plate, slather on the aoil and liberally sprinkle with hot sauce. (I'm particular to Franks, but that may be the Buffalo in me.) Heart healthy? HA! Absofreakinlutely not. Excellent comfort food? Most definitely. Excellent with a pitcher of beer, or sangria in our case...
