     Garlic Roast Chicken with Rosemary and Lemon

Ingredients
2 1/2 pounds boneless, skinless chicken cut into chunks
6 cloves garlic, crushed
3 Tbs. fresh rosemary leaves, stripped from stems
3 Tbs. extra virgin olive oil
1 lemon, zested and juiced
Salt
Black Pepper
1/2 cup dry white wine
 

Instructions
Preheat oven to 450 degrees F.
Arrange chicken in 9x13 baking dish.
Add garlic, rosemary, olive oil, lemon zest, salt, and papper. Toss and coat the chicken, and roast for 20 minutes.
Add white wine and lemon juice to the dish, return to oven and turn oven off. Let stand 5 minutes longer then remove chicken from oven.
