Ingredients
4 cups cooked rice, cold
3 eggs, lightly beaten
4 tblsp cooking oil
4 tblsp chopped shallots
1/2 cup soy sauce
salt and pepper for taste
6 ounces fresh mushrooms sliced
 

Instructions
Heat oil in a frying pan,
then thoroughly mix in eggs, shallots, soy sauce, mushroom slices, and season to taste with salt and pepper.
Fry for 6 to 10 min, stirring from time to time, and serve hot.
Serving Suggestions
Can serve with on its own or with some lamb or chicken curry.
