Ingredients
1 15 oz. can unseasoned black beans, drained and rinsed
4 eggs
1 1/2 Cups Splenda (1 Cup Wheylow)
3Tbl. unsweetened cocoa powder
1 tsp. baking powder
2 TBL. oil (or 2 TBL. unsweetened applesauce for Phase 2)
1 TBL. vanilla
1/2 Cup dry non-fat milk
1/2 tsp. baking soda
 
1/4 Cup ricotta cheese
chopped nuts, optional

Instructions
Preheat oven to 350. Mix all ingredients in a food processor or blender. Pour into an 8x8 pan sprayed with cooking spray. Bake at 350 for 30-40 minutes or until a toothpick inserted into the center comes out clean.
