     Pineapple Zucchini Bread

Ingredients
2 cups sugar
1 cup oil
3 eggs
2 teaspoon vanilla
3 cups flour
2 teaspoon soda
1 1/2 teaspoon cinnamon
3/4 teaspoon nutmeg
1/2 teaspoon salt
 
2 cups zucchini, shredded
1 20oz. can crushed pineapple, drained
1/2 cup walnuts, chopped

Instructions
Beat first 4 ingredients until thick, Sift dry ingredients together. Stir into wet mixture. Add last 3 ingredients and pour into 2 greased loaf pans. Bake 350 for 1 hour (always check). May use smaller foil pans (4)-do not bake as long.
