In a small bowl, thoroughly combine spices. Rub mixture into chicken, inside and out, patting mixture into skin to make sure it is evenly distributed and down deep into skin.
Place in sealable plastic bag, seal and refrigerate overnight.
When ready to roast chicken, stuff the cavity with onions. Roast, uncovered, in a 250 degree oven for 5 hours, (basting occasionally with pan juices) or until pan juices start to caramelize on bottom of the pan and chicken is golden brown.
