     Zucchini Bread

Ingredients
3 eggs
1 cup oil
2 cups sugar
2 cups grated zucchini
3 tsp vanilla
1/2 cup nuts; optional
3 cups sifted flour
1 tsp salt
1 tsp baking soda
 
1 1/4 tsp baking powder
3 tsp cinnamon
Instructions
Beat eggs until foamy. Add oil, sugar, zucchini and vanilla. Mix together.
Add the dry ingredients and nuts.
Pour into two greased loaf pans. Bake in a 350 degree oven for 1 hour in metal pans or in a 325 degree oven in glass pans.
