     Ron's Carrot Cake

Ingredients
1 1/2 cups salad oil
2 1/2 cups sugar
4 eggs, seperated
5 T. hot water
2 1/2 cups sifted flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp nutmeg
 
1 tsp cinnamon
1 tsp cloves
3/4 cups grated carrots
1 cup chopped nuts; optional (pecans or walnuts)

Instructions
Mix oil and sugar; add one egg yolk at a time, add hot water.
Sift together all dry ingredients and beat into egg mixture. Add grated carrots. Mix in nuts.
Beat egg whites until soft peaks form. Fold gently into batter.
Pour into greased and floured 10 inch tube pan. Bake at 350 degrees for 1 hr to 1 hr 10 minutes. Cool 15 minutes before removing from pan.
