     Tomato-Basil Soup

Ingredients
3 28 oz cans stewed tomatoes
1 onion
5 garlic cloves
1/4 cup olive oil
2 c. chicken stock
1/2 c. fresh basil
2 tsp. balsamic vinegar
1 c. whipping cream
 

Instructions
Saute onions and garlic in olive oil. Add canned tomatoes and chicken stock. Bring to a boil.
Blend tomato mixture with fresh basil. Put back into the pot. Add vinegar and whipping cream. Simmer on low for 30 min. Sprinkle with parmesan cheese.
