Ingredients
2 egg whites
2 c. sugar
1/2 c. hot water
1/2 c. light Karo syrup
1/4 t. salt
1 t. vanilla
1/2 c. chopped pecans
 

Instructions
Beat egg whites STIFF (but not dry) in a mixing bowl. Meanwhile, in a large saucepan combine sugar, syrup, hot water, and salt. Cook to hard-ball (250) without stirring. Wipe crystals from sides of pan now and then with fork wrapped in damp cloth. Remove from heat.
Pour syrup VERY SLOWLY over beaten egg whites, beating constantly at high speed about 7-10 minutes. Add vanilla and beat until mixture forms soft peaks and begins to lose its gloss. Add pecans to mixture - or add half the amount of pecans to half the divinity.
Drop from teaspoon onto a cookie sheet covered with waxed paper. Twirl top. If divinity becomes too stiff, add drops of hot water.
