Boil sweet potatoes in skins for 45 minutes. Peel potatoes. Slice potatoes into long halves and place in 9x13 baking pan that has been sprayed with cooking spray.
Combine cornstarch with small amount of OJ until fully dissolved and set this aside. Combine brown sugar, butter, salt and remaining OJ in saucepan and heat to boil. Gradually add cornstarch mix thickening sauce.
Pour thickened mixture over sweet potatoes. Sprinkle pecan pieces over the potatoes. Place in 350 degree oven for 25 minutes.
