Best use of a Taco Dinner Kit Dinner EVER!

Category   Entrees - Maindishes
Sub Category   Quick Meals
Servings   4
Preptime   30 minutes

Ingredients
1 Old El Paso Hard/Soft Taco Dinner Kit
1 1/4 pounds ground beef
Shredded lettuce
Tomatoes, diced
Shredded cheese
Sour cream
Salsa (any heat)

Instructions
Prepare the ground beef with the taco seasoning from the Old El Paso Packet. It can now be used for 3 different dishes in the same dinner, to accomodate fussy families (like mine) without preparing anything extra.
DISH 1 - Hard Tacos. Prepare the hard tacos by layering beef, cheese, lettuce, tomato, sour cream and salsa into the taco shell.
DISH 2 - Take 2 of the 6 small tortillas that come in the dinner kit. Cover one with shredded cheese and place the other on top. Microwave for 30 seconds and you have a quesadilla. Slice with a pizza cutter and serve with sour cream, salsa, lettuce and tomato on the side.
DISH 3 - Using the 4 remaining tortillas, make a stack by layering the following (you can adjust the heat level by leaving out the red chili flakes on a couple of levels)- Tortilla, beef, diced tomato, red chili flakes Repeat until all tortillas are used. On the very top tortilla, sprinkle shredded cheese and bake in a hot oven until melted and a little golden in color. Slice with a large kitchen knife into halves or quarters and serve with sour cream, salsa and lettuce on the side.
