Prepare the ground beef with the taco seasoning from the Old El Paso Packet. It can now be used for 3 different dishes in the same dinner, to accomodate fussy families (like mine) without preparing anything extra.
DISH 1 - Hard Tacos. Prepare the hard tacos by layering beef, cheese, lettuce, tomato, sour cream and salsa into the taco shell.
DISH 2 - Take 2 of the 6 small tortillas that come in the dinner kit. Cover one with shredded cheese and place the other on top. Microwave for 30 seconds and you have a quesadilla. Slice with a pizza cutter and serve with sour cream, salsa, lettuce and tomato on the side.
DISH 3 - Using the 4 remaining tortillas, make a stack by layering the following (you can adjust the heat level by leaving out the red chili flakes on a couple of levels)-
Tortilla, beef, diced tomato, red chili flakes
Repeat until all tortillas are used. On the very top tortilla, sprinkle shredded cheese and bake in a hot oven until melted and a little golden in color. Slice with a large kitchen knife into halves or quarters and serve with sour cream, salsa and lettuce on the side.
