1 batch favourite Sugar cookie dough (not too sweet)
3 tbsp cornstarch or alternatively, 6 tbsp flour
Instructions
Roll out the cookie dough into a pie tin as a pie crust. Crimp.
Bake at the recipe's temperature until done.
If there's extra dough, cut out shapes (like stars) and bake as cookies to place on top of the pie!
Wash and stem the blueberries.
Mix the dry ingredients together, then toss with only 1 cup of the blueberries in a heavy pot.
Add water and lemon juice. Bring to a boil, stirring and crushing the blueberries, until the mixture thickens. (May need 3 tbsp of cornstarch OR 6 tbsp flour to assist the thickening)
Remove from heat.
GENTLY stir in the remaining 2 cups of blueberies.
Let the mixture, and the pie crust cool before assembling.
Decorate with cookies, whipped cream etc.
