Sift together flour, sugar, baking powder, cream of tarar and salt into a bowl. Cut in shortening with pastry blender or two knives until mixture resembles a course meal.
In a small bowl combine the egg and milk. Stir together. Add milk mixture to flour mixture all at once and stir with a fork until a soft dough forms that sticks together.
Turn out onto a well floured surface and knead lightly 15-20 times. Roll dough to 1 inch thickness and cut into biscuits. Place 1 inch apart on a ungreased baking sheet. Bake at 425 for 12-15 minutes or until golden brown. Serve immediatly. Makes about 16 biscuits.
