     Caribbean Jerk Mahi Mahi

Ingredients
4 mahi mahi filets
3 Tbs olive oil, divided
1 Tbs minced garlic
1 Tbs minced jalepeno pepper
1 tsp salt
1/4 tsp pepper
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp allspice
 
1/4 tsp ground thyme
1/4 cup orange juice
2 Tbs lime juice (usually 2 limes)
2 Tbs soy sauce
1 can crushed pineapple
fresh chopped cilantro for garnish

Instructions
In a large bowl, add- 1 Tbs olive oil, garlic, jalepeno, salt, pepper, cinnamon, nutmeg, allspice, thyme, orange juice, lime and soy sauce. Whisk to mix well. Add the mahi filets, cover and let marinade in the refrigerator for thirty minutes to one hour. Heat a large skillet over medium-high heat. Add the remaining 2 Tbs of olive oil and saute mahi mahi, turning once, until cooked throughout.
Serve over a bed of rice. Top w/ crushed pineapple and sprinkle w/ cilantro.
Serving Suggestions
To reduce sodium, substitute low-sodium soy sauce and salt substitute.
