     Aunt Rose's Pineapple Upside Down Cake

Ingredients
1 cup margarine
1 cup brown sugar
1 can pineapple slices, drained w/ juice reserved
1 box yellow or white cake mix (ingredients needed for mix)
maraschino cherries (optional)
chopped walnuts (optional)
Cool whip (optional)
 

Instructions
Using a 9x13 cake pan, melt butter and brown sugar into the bottom of the sprayed pan until the lumps are out and the mixture is smooth.
Using box of cake mix, follow directions on the box but use the reserved pineapple juice to add to water to make 1 1/3 cups of liquid for the cake.
Lay the pineapple slices down on the brown sugar/butter mixture (you can put a cherry in eaach pineapple slice and add some chopped walnuts if you want)
Pour cake mix over the pineapples and bake at 350 degrees for an hour or so and test until toothpick comes clean. Cool and flip over onto serving plate. You can serve with cool whip on top.
