     Simple Cream of Potato Soup

Ingredients
2 large Yukon Gold potatoes, peeled and sliced 1/8 inch thick (about 4 cups)
2 cups whole milk
1 cup heavy cream
Handfull of small white button mushrooms sliced thinly
1/2 cup water
1/2 - 1 tsp Salt
Garlic to taste
 

Instructions
Combine potatoes, milk, cream (or half & half) and 1/2 cup water in a 4-quart pot.
Bring to a simmer over medium heat and once it has begun to simmer/boil stir constantly so the milk doesn't scald on the bottom.
Add salt and garlic; continue simmering for 20 min. Add mushrooms and simmer for approximately 6 minutes more. Serve.
Note- If this doesn't seem hearty enough you can also add frozen sweet corn, rice, or carrot slices. But, add carrot at the beginning with potatoes. Add corn near the end with the mushrooms. Do not add corn to soup and leave sitting over night as it will soak up all your nice creamy broth. Instead, steam rice and and add to individual bowls.
