     Risotto with Vegetables and Ham

Ingredients
1 tablespoon butter
1/2 cup chopped onion
1 (12 oz) pkg. (1 2/3 cup) short grain rice
3 1/2 cups chicken broth
1 1/2 cups broccoli, carrots, cauliflower
1/3 cup cooked ham cubed
1/3 cup shredded parmesan cheese
 

Instructions
Melt margarine in large skillet. Add onion and cook until tender. Add rice and broth, bring to a boil. Reduce heat to low, cover and cook for 10 minutes.
Stir in vegetables and ham. Bring to a boil. Cover, simmer for 8 to 10 minutes or until liquid is absorbed and rice is tender. Stir in cheese until melted.
