     Ellen's Squash Souffle

Servings   6-8

Ingredients
1 package defrosted orange squash
4 eggs beaten
1 pint Coffee Rich (or similar non-dairy creamer) defrosted
1/4 C melted margarine
1/4 C sugar
1/2 C. flour
pinch salt & cinnamon
 

Instructions
Put ingredients in blender. Mix well. Pour into sprayed casserole (9X12). Bake 1 hour at 350 degrees until set and slightly brown. Serve immediately (will be puffy like a souffle when it's done)
Serving Suggestions
Delicious as side-dish. Goes with just about everything.
