First put half the peppermint candies in a plastic bag and using a rolling pin or meat tenderizer crush the candies into large pieces. In a second bag, crush remaining candy into dust.

Line a 12x9 in jelly roll pan (or cookie sheet with a rim) with parchment paper. Melt dark chocolate over double boiler then add peppermint extract. Stir to combine, then pour into pan and cool in the refrigerator until hard.

Next melt white chocolate over double boiler then add peppermint dust. Stir to combine and pour over dark chocolate. Working quickly, spread white chocolate without pushing down and disturbing the dark chocolate. Sprinkle larger pieces of peppermint candy over the white chocolate. Using clean hands, gently push larger peppermint pieces into white chocolate. Cool in refrigerator until hard.

Remove parchment paper and break into pieces - then enjoy!
