12 c Summer Squash (or Zucchini or any other squash)

3 Eggs
|

1 Tube Crushed Saltines -OR-
|
|
3/4 c Whole Wheat Flour
|
|
Salt, pepper, seasoning salt, to taste

Slight bit of Olive Oil
|
|
Cheese (optional)
|

Instructions |
|
|
Mix all ingredients, scoop out portions using 1/4 cup measuring scoop.
|
|
|
Pat it into patty shape and fry on a hot pan that is coated with olive oil.
|
|
|
Cook 3 - 4 minutes on each side, top with cheese if desired.
|
