5 cups peeled, cubed sweet potatoes

1/2 cup chopped celery

1/2 cup red onion

2-3 tablespoons sweet pickle relish

1 teaspoon prepared yellow mustard

salt and pepper to taste

Instructions |

|
Toss cubed potatoes in the oil and place on baking sheet. Bake in oven for 25-30 minutes until fork tender. Leave to cool.
