Cut potatoes in half lengthwise and scoop out the pulp, leaving 1/4 in the shell.
Place potatoes skins on a greased baking sheet.
Combine oil, parmesan cheese, salt, garlic powder, parika and pepper, brush over both sides of skins.
Bake at 246C for 7 mins, turn. Bake til crisp about 7 mins more.
Sprinkle bacon and cheddar cheese inside skins, bake 2 mins longer or until the cheese has melted. Top with sour cream and onions
