Ingredients
2/3 cup diced lamb
680g potatoes peeled and sliced thickly
1 - 2 large onions thinly sliced
1 level tbls good quality dripping from meat or bacon
stock
salt and pepper, nutmeg or all spice for seasoning
Chopped parsley or chives
 

Instructions
Melt the dripping in a large pan Add a layer of sliced potatoes then layer of onion and next a layer of meat Add enough stock or water to cover (though some prefer stovies dry, in which case only add 2-3 tbls)
Then repeat the layers once again and season the dish thorougly... in addition to salt and pepper, add some nutmeg or all spice
Cover and cook over a low to moderate heat (shaking the pan occasionally) for about 30 mins or unti the potatos are tender and the liquid is absorbed
Serving Suggestions
serve with sprinkling of parsely or chives
