Put the zest of the orange in a pan with the water. Bring to boil and cook 10 min. Drain the water and set the cooked zest for later.
Put apple into the pan. Sort cranberries, throwing soft ones away. Add the good cranberries, juice of the orange and the peel to the pan, along with remaining ingredients.
Boil, then reduce and simmer partially covered, stirring frequently until cranberries burst. Cool slightly and serve. Best served warm or at room temperature.
