2 boneless, skinless chicken breasts; ooked and cubed
28 oz canned tomatoes
2 cups chicken broth
1 cup uncooked white rice, long grain
Instructions
Coat lg skillet withcooking spray. Over hig heat, saute the sausage until edges are crispy. add onion, celery, and green pepper and saute until tender.
Reduce heat and stir in cayenne, thyme, salt, pepper and garlic. Saute until garlic is fragrant.
Stir in chicken, tomatoes, broth and ice. Bring to a simmer, cover and let cook until rice is tender; approx 20 min.
