In a small skillet, melt butter over medium heat. Add onion, saute 4 minutes. Add grated apple, bourbon, salt, cayenne pepper, cinnamon, and cumin; saute for 3 minutes. Remove from heat.
In a large sauce pan, add remaining ingredients, mix well. Simmer over medium-low heat 5 minutes, stirring frequently. Add apple mixture, stir well. Simmer2 minutes, remove from heat. After cooling, transfer to a tightly covered jar or plastic container, refrigerate.
