     Zucchini Bread

Ingredients
4 cups grated zucchini
4 eggs
1 cup vegetable oil
2 cups sugar
4 cups flour
3tsp vanilla
2tsp cinnamon
1tsp salt
1tsp baking soda
 
Optional - 1/4 cup walnuts
Preheat oven 350'

Instructions
Combine zucchini, eggs, oil, cinnamon, salt, baking soda, vanilla, and sugar. Stir well.
Slowly add flour to mixture while blending in mixer. Finished product should resemble thick pancake batter. If too thick add another egg. Add nuts, if desired.
Grease and flour bread pans. Fill pans 3/4 of the way to the top.
Bake for 35 minutes or until golden brown. Allow to cool 5 minutes before removing from pans. Allow to finish cooling on wire racks.
