     The Best Fresh Plum Cake

Ingredients
1/2 C butter or margarine
1/2 c plus 2 Tbls. sugar
1 tsp grated orange peel
1/2 tsp almond extract
1/4 tsp salt
3 large eggs
1 C flour
1 - 1.25 pounds firm ripe plums
1 - 2 Tbls powdered sugar
 

Instructions
Cut 1/2 C butter into small pieces and put in a bowl. Add 1/2 C sugar and stir to combine, then beat with a mixer on high speed until well blended, about 2 minutes. Add orange peel, almond extract, salt, and eggs. Stir to mix, then beat on high speed until well blended and smooth, 3 - 4 minutes. Add 1 C flour and stir to mix, then beat on high speed to blend.
Butter and flour an 11 inch tart pan with removable bottom or a 9 x 9. 13 x 9 would work but it would be a thin cake.
Scrape batter into pan and spread level. Rinse plums, cut in half and pit; cut fruit into 1/4 inch slices. Shingle the slices onto the batter overlapping the plums. Sprinkle with the remaining 2 Tbls of sugar.
Bake on the middle rack at 375 degrees until batter that pops up is lightly browned and tart begins to put away from pan sides, 35 - 45 minutes. Let cool about 10 minutes. Dust with powdered sugar If done in tart pan remove pan rim and set on plate.
Serving Suggestions
Serve with slightly sweetened whipped cream, creme fraiche or sour cream, or vanilla ice cream.
