2 large or 3 medium potatoes (your fav for mashed)
extra virgin olive oil
2 slices extra smokey bacon
1/3 cup sour cream (or more depening on how creamy you want the potatoes)
1 rounded tablespoon of prepared horseradish
freshly ground black pepper
green onions added sliced adds a good flavor too (1 gr onion)
Instructions
Peel potatoes, cut into chunks, place in water and boil them - add salt to water and cook 10-15 minutes until tender
Cook the bacon in a separate pan until browned, drain the bacon and set aside
Mash the potatoes after they are finished cooking. Mix in sour cream and mash the potatoes after they are finished cooking - add bacon and horseradish. Add green onions if using.
