     Prawn balls

Ingredients
1 1/3 lb small prawns minced
2 teaspoons light soy sauce
1 tsp sesame oil
1/2 teaspoon salt
1/2 tsp sugar
dash of pepper
dash of monosodium glutomate
1/2 egg white
1 tsp cornflour
 
2 stalks spring onion sliced finely
sprig of coriander leaces sliced finer.
1 1/2 loaves bread cut into small cubes
4 fresh water chestnuts
oil for deep frying

Instructions
Shell wash and devein prawns and dry. Mince to a fine paste and season with soy sauce, sesame oil, salt, sugar, pepper, monosodium glutomate, eggwhite and corn flour.
Stir in spring onion, coriander leaces and chesnuts. Marinate for 1/2 hour in friedge
Drop teaspoons of seasoned mixture onto bread cubes and form into bread coated balls.
Deep fry in oil over low heat until golden in colour.

Chutneys and chilli garlic sauce
