     Blueberry Muffins

Ingredients
2 C unsifted All Purpose Flour
1 Stick of butter or margerine (softened)
1 C White sugar
2 Large eggs
1/2 C Whole Milk
2 tsp. Baking Powder
2 C fresh or frozen Blueberries
1 tsp. Vanilla
5 Tbsp. of White sugar to garnish muffin tops
 

Instructions
Spray muffin tins with cooking spray. Also spray tops of muffin pans to prevent any overflow of muffins from sticking to pan. No muffin papers required. ( Can use muffin papers if you want.)
In a large mixing bowl, cream butter and sugar together. Add eggs one at a time and mix well. Add vanilla. Set bowl aside.
In a small bowl, combine all remaining dry ingredients. Add dry ingredients to wet ingredients, stirring in milk alternately. Set aside large bowl. Rinse blueberries, check for stems, drain well and pat dry with paper towel. Add blueberries, stirring(gently) by hand, into large mixing bowl. Generously sprinkle tops of muffins with white sugar.
Large muffin tins- Bake for 33-35 minutes at 375 degrees. Regular muffin tins- Bake for 30 minutes at 375 degrees.
