In a large, shallow skillet over moderate heat, melt butter. Saute' shallots in the butter approx 2 minutes. Add flour and cook 1 minute longer. Whisk in consomme' in a slow stream. Bring sauce to a bubble and allow to simmer over low heat.
Pile roast beef loosely on a large work surface and season with steak blend or salt and pepper. Using togs, dip meat into sauce and pile onto rolls. Serve with extra sauce for dipping.
