Mix the 2 cups white sugar and 4 tablespoons cocoa together. Can be done by hand or with an electric mixer. Add 1/2 cup milk. Stir. Heat this concoction over medium heat. Keep stirring. Add melted butter and bring to low boil for one minute. Turn down to a low simmer.

Add the 1/2 cup peanut butter. (We used creamy)Add the 1 teaspoon vanilla and stir. (We actually added everything to the pan and then used a heat resistant electric mixer in the hot pan....this is the lazy way.) Now add the oatmeal and stir.

Lay out 2 long sheets of wax paper. Drop cookie dough by the spoon fulls onto wax paper to set them. This is a great time to let the kids help. Just be sure your cookie mixture and the pan it is in is not too hot.

Notes- doubling this recipe is always a good idea. Great for summer time as limited heat created in the kitchen.
