     Baba Ghanouj

Ingredients
2 medium eggplants
4 tbsp tahini (sesame butter)
2 cloves garlic, finely chopped or pressed
Juice of one lemon
2 tbsp chopped fresh parsley (optional)
Salt and pepper to taste
 

Instructions
Heat oven to 300. Pierce eggplants with a fork, place on a baking sheet and bake until eggplants begin to wrinkle and deflate, at least 40 minutes. Let cool completely.
Slice eggplants in half, scoop insides into a bowl, and mash with a fork. Add remaining ingredients and mix well. Variation- For Spice Baba Ghanouj, add a 2 ounce jar of pimientos, well mashed, and 2 to 3 tsp of hot sauce. If a food processor or blender is available, blend the mixutre until smooth.
