     Autumn Stew

Ingredients
3 tbsp olive oil
1 large onion, finely chopped
3 to 5 cloves garlic, finely chopped
1 sweet potato, peeled and chopped into 3/4 inch cubes
1 cup butternut squash, peeled and cubed
2 tbsp paprika
2 tsp turmeric
1 bay leaf
1 tsp salt and 1 tsp pepper
 
Pinch of cayenne pepper
1 large tomato, finely chopped
1 green, red, or yellow bell pepper, finely chopped
2 cups vegetable broth or water
15 oz can chickpeas, with liquid
2 cups of any combination of your favorite frozen vegetables
1 cup frozen peas

Instructions
In a large pot, heat oil. Add onion and garlic and saute for about 3 minutes.
Add sweet potato and squash (you could omit the squash and add more sweet potato). Stir and cook for 5 minutes.
Add spices. Stir and add tomato and bell pepper. Cook for 1 minute, stirring constantly. Add broth and simmer for about 5 minutes.
Add chickpeas and frozen vegetables. Simmer for about 15 to 2o minutes or until all vegetables are tender and flavors are blended. Serve with crusy bread. Makes about 6 servings.
