Mix rice and tuna in a large mixing bowl. Add the remaining ingredients and stir until a uniform blend has been achieved. Adjust seasoning to your desired tastes. Chill. This portion of the salad can be made ahead.
Cut tomatoes to form wedges and position on salad greens in the form of a pinwheel. Place chilled rice and tuna mixture in the center and top with guacamole. Serve with white wine and enjoy.
