     Texas Hills Pork Chops w/ Mustard-Caper Sauce

Ingredients
1 tbls EVOO
1 1/2 cups chicken stock
4 9oz pork loin chops (1.25 in thick)
1/3 tsp finely chopped rosemary
1/3 cup drained capers
2 tbls dijon mustard
salt & fresh ground pepper to taste
2 tbls unsalted butter
 

Instructions
In a large skillet, heat the olive oil until simmering. Season meat with salt and pepper, add them to skillet and cook over moderately high heat until well browned, about 5 minutes per side. Transfer the meat to a large plate and cover with foil. Add the stock, capers and chopped rosemary to the skillet and boil until reduced to 3/4 cup (about 5 minutes).
Return the meat to the pan and simmer until cooked through (about 3 minutes). Transfer the meat to 4 plates. Whisk the mustard and butter into the sauce and season with salt and pepper. Pour the mustard-caper sauce over the meat and serve.
