     Torre di Pietra Green Chile Chicken Enchilada

Ingredients
1 chicken fryer
1 1/2 cups chopped green chile
2 tbls olive oil
18 corn tortillas
2 cans cream of chicken soup
shredded longhorn and monterey jack cheese
 

Instructions
Boil fryer for one hour. Set aside the chicken broth. Debone and chop the chicken. Place olive oil in a large skillet and brown the green chile on medium heat. Slowly add the chicken soup along with cups of the chicken broth; salt and pepper to season and bring to a boil. Place the chopped chicken into the sauce and stir. Reduce the heat to simmer.
While the chicken sauce is simmering, heat about 4 T olive oil in small pan on medium/high heat. Dip each corn tortilla in the pan for just a few seconds. Place each tortilla in the sauce and then place it in a 9X13” casserole dish. Finish one layer of six tortillas, spread chicken chile sauce and sprinkle both cheeses on top. Make two more layers of tortillas, sauce and cheese. Cover and bake at 350 degrees for 20 minutes.
