Heat oven to 400º F. Cook the rice according to the package directions.
Meanwhile, heat 1 tablespoon of the oil in a large ovenproof skillet over mediumhigh heat. Season the pork with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook until browned, 2 to 3 minutes per side. Transfer the skillet to oven and roast until the pork is cooked through, 6 to 8 minutes.
Meanwhile, heat the remaining 2 tablespoons of oil in a second large skillet over mediumhigh heat. Add the broccoli, garlic, soy sauce, and 1/3 cup water.
Cook, covered, until the broccoli is tender, 5 to 6 minutes. Serve with the pork and rice.
