In a deep, 2-quart, heat-resistant, non-metallic casserole, crumble the
ground beef. Add onion, green pepper and crushed garlic. Heat,
uncovered, in microwave oven 6 minutes or until meat is browned. Stir
occasionally to break up the meat. Add the remaining ingredients except
cheese. Mix thoroughly to combine. Put back into microwave for 7
minutes. Then, if desired, sprinkle cheese over the top of the meat and
heat until cheese melts.
This Texas Hot Hash recipe is for the microwave, but you can just as
easily brown the meat in a skillet, add other ingredients in the proper
order and cook long enough to get the rice to the desired consistency,
and only microwave near the end to melt the cheese.
